Enjoy South African Melktert
Crust
125g butter
1 1/2 cups flour
1/4 cup sugar
1 egg
1 tsp baking powder
salt
- Preheat the oven to 180 C.
- Rub butter into the flour.
- Mix sugar & egg together.
- Add baking powder and salt to the flour mixture.
- Mix all ingredients together, to form a dough.
- Press dough into a greased pan.
- Bake the crust for 10 - 15 minutes, until golden brown.
Filling
4 - 6 cups milk
3 Tbsp butter
3/4 Tbsp maizena
4 eggs
1 cup sugar
3/4 Tbsp flour
vanilla essence
- Combine milk and butter in a pot and bring to a boil over medium heat.
- While milk is being heated, mix together maizena, sugar and flour. Add the beaten eggs. Whisk until smooth.
- Once the milk starts to boil, slowly whisk in the egg and sugar mixture, stirring constantly. Stir until mixture become thick, then remove from heat.
- Pour filling onto crust. Sprinkle with cinnamon.
- Chill before serving.
Best enjoyed with a cup of coffee together with the family.
