Enjoy South African Melktert

Crust
125g butter
1 1/2 cups flour
1/4 cup sugar
1 egg
1 tsp baking powder
salt

  1. Preheat the oven to 180 C.
  2. Rub butter into the flour.
  3. Mix sugar & egg together.
  4. Add baking powder and salt to the flour mixture.
  5. Mix all ingredients together, to form a dough.
  6. Press dough into a greased pan.
  7. Bake the crust for 10 - 15 minutes, until golden brown.

Filling
4 - 6 cups milk
3 Tbsp butter
3/4 Tbsp maizena
4 eggs
1 cup sugar
3/4 Tbsp flour
vanilla essence

  1. Combine milk and butter in a pot and bring to a boil over medium heat.
  2. While milk is being heated, mix together maizena, sugar and flour. Add the beaten eggs. Whisk until smooth.
  3. Once the milk starts to boil, slowly whisk in the egg and sugar mixture, stirring constantly. Stir until mixture become thick, then remove from heat.
  4. Pour filling onto crust. Sprinkle with cinnamon.
  5. Chill before serving.

Best enjoyed with a cup of coffee together with the family.
